We do not list:
Wagyu raised outside Japan
Crossbred animals graded under foreign systems
Cuts the herdsmen did not select
Any shipment that has broken temperature
What remains is what passed.
That is the catalogue.
Not everyone who raises Wagyu becomes a partner.
A partnership is tested before it is signed. We visit the gyusha, the cattle shed a herdsman keeps. We follow a herd through more than one grading season before a single animal reaches our catalogue. A herdsman who has done this for decades knows how an animal will grade well before it is assessed. That judgement is why we chose them.
