From Hyogo with Love: A Journey Through Kobe's Heritage Farms
We travel to the misty hills of Hyogo Prefecture to meet the families who have preserved the Tajima lineage for over a century.
The road to Tajima country winds through cedar forests and terraced rice paddies, past shrines so old their wooden torii have greyed to silver. This is Hyogo Prefecture — home to the most rigorous cattle breeding tradition in the world, and the birthplace of Kobe beef.
Kobe beef is not simply a product; it is a protected designation of origin, like Champagne or Parmigiano-Reggiano. To qualify, a steer must be a purebred Tajima-gyu — a bloodline traced back over a thousand years — born, raised, and processed entirely within Hyogo Prefecture, graded A4 or A5 by the Japan Meat Grading Association.
We visited the Nakamura family farm in Asago, a fourth-generation operation that still practices the ancient technique of feeding cattle with spent sake lees — a byproduct of local sake brewing that gives Kobe beef a faint, intoxicating sweetness beneath its characteristic umami depth.
"My grandfather always said the cattle could taste his intentions," said Kenji Nakamura, 58, surveying his herd. "If you are impatient or careless, they know. Good wagyu requires the same care as a long marriage."
