The Knife and the Cut: Mastering Wagyu Butchery the Japanese Way
Japan's top butchers approach their craft with the same reverence as sushi masters. We spend a day inside a Tokyo meat atelier to understand why the cut is half the flavor.
In a quiet alley behind Shibuya station, behind an unmarked wooden door, Taro Ishida has been breaking down wagyu carcasses for thirty-one years. His knives — a collection of over forty, forged by three different blacksmiths in Sakai — are sharper than most surgical instruments.
"Western butchery follows the bone," Ishida says, guiding his yanagiba through a rib section with a single, almost silent stroke. "Japanese butchery follows the muscle. We don't fight the meat. We listen to it."
The distinction matters enormously with wagyu. The intramuscular fat deposits that give wagyu its flavor are not uniformly distributed across a muscle group. They pool at the junctions between muscle seams — and it is precisely along these seams that a skilled Japanese butcher cuts, preserving the integrity of the marbling rather than bisecting it.
The result, from a ribeye carved the Japanese way, is a cross-section that showcases the full lace-like pattern of the BMS grade. Cut across the seam instead, and you lose both the visual drama and a measurable degree of flavor.
